“Stuffed Macaron on chocolate parfait” or “Pineapple Carpaccio with lemon-coconut panna cotta”? Cruise guests love desserts, and our Pastry Chefs have a strong know-how in sweet courses. They try to push the senses to the limits of the unknown. Committed to their craft, with a wide repertoire of pastries, cakes and other desserts, the Pastry Chef sees to it that every sweet tooth on board is satisfied. They are imaginative, creating dessert options that are light, refreshing and intriguing. They know which flavours enhance or complement each other and can bring savory pantry items into desserts. Their role is to work precisely and quickly, paying attention to attractive dessert presentation.
Requirements:
- specialist in pastry products
- experience in a similar role as Pastry Chef, chef de patisserie, cake designer, cake decorator, baker, pastry or bakery clerk (German: Patissier, Konditor, Konditorin)
- competence in the preparation and display of a variety of desserts, from mousses to meringues, ice creams and sorbets, cookies, dough, muffins and Danishes, pies and tarts, cake layers, pastry cream and dessert sauces
- very good knowledge of ISO quality systems and HACCP procedures
- ability to use a variety of colors and shapes to create attractive dessert displays
- knowledge of pleasing contrasts of texture and temperature for plated desserts
- ability to work in a team
- ability to communicate in German or English
- people skills and ability to interact with guests during dessert-cooking demonstrations
- international experience is an advantage
Responsibilities:
- make and bake all the doughs, batters, fillings, creams, and sauces with the correct techniques
- assemble desserts and present pastry, desserts, teatime cakes and buffets for passengers and crew at international standards
- create new and exciting plated desserts to renew menus and engage the interest of guests
- maintain company quality standards and suggest improvements
- share recipes with guests during onboard cooking demonstrations
- participate during product loading together with the other members of the crew
